Cheesy Chicken Enchiladas

  • Ingredients

    • 1 can (18.5 oz) Progresso® Traditional or Light chicken and cheese enchilada soup
    • 1 can (10 oz) Old El Paso® hot or mild enchilada sauce
    • 2 cups shredded cooked chicken
    • 2 cups shredded Monterey Jack cheese (8 oz)
    • 10 corn tortillas (6 inches)
    • 2 medium green onions, thinly sliced
  • Directions

    1. Heat oven to 350°F. In medium bowl, stir together soup and enchilada sauce. Spread 1 cup soup mixture in ungreased 11x7-inch baking dish.
    2. In large bowl, mix 1 cup soup mixture with chicken and 1 cup of the cheese; reserve remaining soup mixture. On microwavable plate, stack tortillas and cover with paper towel; heat on High 1 minute to soften. Place 1/4 cup chicken mixture along middle of each tortilla. Roll up and place seam sides down in baking dish with sauce.
    3. Pour remaining soup mixture over enchiladas. Sprinkle with remaining 1 cup cheese. Sprinkle green onions on top. Bake about 30 minutes or until cheese is melted and sauce is bubbly around edges.

      I love this recipe I have had numerous people ask for it. I also expierement with it on my tortillas I spread refried beans first then I add salsa on topping but either way easy fast and goooood

      I made this last week and my family went nuts. I have been asked to make it again this week. My 8-yr old actually ate this recipe 2 nights in a row and had second helpings. Delicious and very easy too! This is definitely a must try for all of you viewing this recipe :)

      I have made this recipe 2 times now. Once to try it out and once for book club. This recipe takes 15 minutes to pull together and it is very wholesome, low calorie, and tasty. If you don't have any leftover chicken, buy a rotisserie chicken. I made some modifications, but it basically is the same. Modifications: 1) Progress Chicken and Cheese Enchilada Soup LIGHT. This is found at Kroger. I also saw it at Target. 2) Instead of Enchilada sauce, I substituted Hot Salsa, any kind will do, I used Fresh Gourmet. 3) Added a can of Black Beans to the mixture 4) Used 2% Cheese, I used cheddar, but any kind is fine. 5) Used flour tortilla shells since my family prefers them.

      This sounds good! The soup is at Walmart ... I bought 6 cans because that's the only place I've ever seen it. Now that I see everyone has hard time finding it I will replenish always. I love this soup for lunch 90 calories and So Good!

      August 24, 2013 The reason for my visit to the Progresso Soup site was to investigate if there is actually a flavor of soup that (2) Betty Crocker recipes call for. The easy Chicken and Cheese Enchiladas Receipe calls for Progresso Chicken Enchilada Soup. The T.J. Ford's Tex-Mex Enchiladas Receipt calls for Progresso Traditional Chicken Cheese Enchilada Soup. I am beginning to believe that this product is not carried in any stores in the South Orange County, California area. I was beginning to think it did not exist or it was a typo error but since after reading other reviews I see many have had the same problem. I too was going to use the Progresso Tortilla Soup but changed my mind and decided I would not pay money for a product that made me go through this much work just to satisfy a recipe. Winter is on it's way and I will be sure to stock my cupboard with Campbells Chuncky Soups since they are reliable in processing their product so it can be delivered all over the USA to it's customers. I will not rate a recipe that I can not make. Now I can't even add this reveiw unless I give a star rating. This is not a true rating for this recipe.

      Cannot find the soup anywhere in our area. Got this recipe from the WalMart ad in the Sunday Paper months ago, but they apparently don't carry the ingredients (???). Neither do any of the other grocers in my area. I substituted Chicken Tortilla soup, which was the closest thing I could find. My family says it's "okay." I would love to try it with the proper ingredients, though. The star rating is because of the difficulty in finding the ingredients.

      After looking at Albertsons, Walmart, Tom Thumb & Target..........I finally found this soup at Kroger. I'm giving this 1star so far since it was so hard to find soup! After I fix this recipe for my grandkids tomorrow night, I'll let you know how many stars they give it...LoL!

      I am rating this recipe a five on taste, but the recipe as they have it did not have enough chicken for 10 enchiladas. I had added a little bit more than the 2 cups called for and then it only made 9 of them so I had some sauce left over and added some more chicken to it to make the 10th one. It probably took about 1/2 cup more than called for and I used a 1/4 cup measuring cup to fill all of them. They were very good and easy to make.I used the convenience of a rotisserie chicken which made it a quick prepare. Everyone loved them and my husband ate 3 of them! I have had the recipe saved for several months but could not find the soup until last week at publix. I will definitely be making these again... in fact I am making them for a church dinner this weekend.

      I could not find the Progresso Traditional chicken cheese enchilada soup at our local Price chopper. Went tou your search locator and it said no match... How is a person supposed to have usp code when they have neve bought the product? I am substituting a Campbells soup for this item. I was very disappointed! s
