Easy Weeknight Chicken Parmesan

Serve your family this chicken and spaghetti dinner made using Progresso™ Recipe Starters™ tomato sauce – ready in 30 minutes.

  • Ingredients

    • 8 oz uncooked spaghetti
    • 1/3 cup Progresso® Italian style panko crispy bread crumbs
    • 1/3 cup shredded Parmesan cheese
    • 4 boneless skinless chicken breasts, flattened slightly
    • 2 cloves garlic, finely chopped
    • 1 can (18 oz) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce
    • 1 cup shredded mozzarella cheese (4 oz)
  • Directions

    1. Cook and drain spaghetti as directed on package.
    2. In large resealable food-storage plastic bag, mix bread crumbs and Parmesan cheese. Shake each chicken breast in bread crumb mixture; set aside.
    3. In 12-inch skillet, heat 2 tablespoons vegetable oil over medium-high heat. Stir in garlic; cook until garlic starts to brown. Add chicken breasts; cook 6 to 10 minutes, turning once, until browned. Pour cooking sauce around chicken; sprinkle chicken with remaining bread crumb mixture and mozzarella cheese. Heat to boiling. Cover; reduce heat to medium. Cook 5 to 8 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F) and cheese is melted. Serve with spaghetti.

      Went to two different grocery stores for the ingredients. One store didn't have the panko crumbs, and neither store carried the recipe starter (fire roasted tomato). Apparently, it's not carried in my city?? So, we used half of the basil recipe starter and half of Classico's fire roasted tomato pasta sauce. The chicken took a lot longer to cook; I forgot to flatten them. The garlic blackened and stuck to a few parts of the chicken, so certain bites were way too overpowered with garlic. I would actually suggest not using garlic at all. It also wasn't very crispy/breaded. But, overall, it was quite tasty and definitely filling. After my experience with it, I don't know if I would make it again.

      I made this dish a couple of nights ago. It was delicious. I had bought a can at the local Dollar Tree for a $1. That was a couple of months ago. I was sure hoping they still had some. They did and had reduced it to 50 cents. I bought 2 cases and am going to fix it when we go to our daughters at Ft. Hood, Texas this weekend. I also cooked it about 20 minutes longer. Also you could have some extra sauce because it was great over the spaghetti.

      I'v made this dish twice. The first time I made just like the direction said, and while we loved the flavor by the time the chicken cooked it was a sticky mess. Not to be defeated I took another stab at it. This time I found some cut up chicken breast It was also a lot cheaper. Instead of Italian panko I got the plain. The Italian made it a bit over the top. I cooked the chicken and garlic in 3 tablespoons olive oil on med-low heat covered for 30 mins. turning twice. Then I added the sauce. and cooked med-low covered for another 30 mins. I know my way takes longer but the chicken seemed to be a lot more tender. After 30 mins. I added the cheese turned up the heat some to a good simmer and cooked for 15-20 more mins. It was fantastic.

      Made this for dinner last night. My husband and I loved it, Have left overs we are looking forward to eating again tonight. Chicken was crispy on top and tender and juicy on inside. Will be trying this one again and suggesting it to family. I was impressed enough that I got on here to look for more recipes to try. Plan on buying all the sauces today when I go to the store, to try more flavors. Its cheaper to use your sauces then buying all the ingredients to make homemade and takes lots of less time. Thank-You

      It was very good. Crispy coating and tender chicken. It was so easy. I hadn't made chicken parmesan for years because it was so much work and then had to be baked in the oven. Who knew. I can't wait to make it for friends.

      My nephew wanted to cook his Mommy and sisters a good dinner. This is what he chose. It was so easy and he did a great job. Everyone loved it, even his picky sister who usually does not eat spaghetti. She ate every bite!

      It had way too much garlic flavor, the chicken wasn't as crispy as pictured above, because the progresso crumbs just wouldn't stick to the chicken. The sauce just wasn't that great in my opinion. It was a waste of money for me, I plan on making this next time but with different ingredients. My chicken parmesan looked nothing like pictured above!

      my mom bought a can of tomato sauce. She bought all the ingredients started cooking it. Through all the ingredients into a skillet didn't even look up the directions messed it all up lol. Epic fail.... Moral of the story.... is to look up the directions.

      This was a GREAT recipe and easy to make. I added some mushrooms to the sauce, but other than that it was perfect. I also used regular bread crumbs because I didn't have the Italian panko style ones and angel hair spelt pasta (I just prefer that to regular spaghetti). Already recommended to my parents as my dad is a big chicken Parmesan fan. I'll be making this again!
